For this homemade pasta recipe you need to boil your potatoes with the skins left on. Once the potatoes are tender, remove them from the heat and allow them to cool. Peel each potato and mash them in a large bowl. Add the flour and egg and if you wish you can add salt and pepper. Mix thoroughly until you have dough. Knead lightly, adding a little more flour if your dough is still sticky. Roll out your dough so it's around 1/2 inch (1 cm) thick and then chop into 1 inch (2.5 cm) strips. Cut each strip into 1 inch pieces and press a fork lightly into the top of each piece to indent the top. Cook your gnocchi in batches in a large pot of boiling salted water.
