Sweet Potato Soup with Squash and Garlic

Ingredients For Homemade Sweet Potato Soup Recipe

  • 1 sweet potato (about 12 oz (350g)
  • 1 acorn squash
  • 4 shallots
  • 2 tablespoons olive oil
  • 5 - 6 garlic cloves (unpeeled)
  • 1 1/2 pints (850 ml) chicken stock
  • 4 fl oz (125ml) single cream
  • Salt and pepper
  • Snipped chives (to garnish)

Method

  1. Preheat the oven to 375 F (190 C, gas mark 5)


  2. Cut the sweet potato, squash and shallots in half through the stem end.


  3. Scoop out the seeds from the squash and brush the cut sides with the oil.


  4. Get a shallow roasting tin and place the vegetables, cut side down, into it.


  5. Add the garlic cloves to the tin. Roast for about 40minutes.


  6. Take the pan out of the oven and leave to cool. Once cooled, scoop the flesh from the squash and sweet potato out and put into a sauce pan along with the shallots.


  7. Peel the garlic cloves and add the insides to the saucepan.


  8. Pour in the stock and use salt and pepper to season. Bring to the boil and then reduce the heat and simmer (partially covered) for about 30 minutes. Stir now and again.


  9. Let the soup cool a little and then process until smooth in either a blender or food processer. (if you are using a food processor only use enough cooking liquid to moisten the soup solids, reserve the rest and combine after).


  10. Rinse the pan and return the soup to it. Slowly stir in the cream and then season with salt and pepper; leave to simmer for another five - ten minutes.


  11. Take the pan of the heat and pour the soup into bowls. Garnish the soup with pepper and snipped chives and then serve.
