Recipe For Homemade Ice Cream

With this recipe for home made ice cream you get to control the creaminess and the flavor as well as the sugar content. What's more - it's often cheaper to make home made ice cream too!

 

Homemade Ice Cream

The HomeMade Vanilla Extract

Before we get into some recipes and variations for your home made ice cream it's important to create one of the most vital ingredients for most ice cream recipes - vanilla extract.

Of course you can buy artificial vanilla extract from most grocery stores, but your ice cream will taste much better if you make it yourself.

Method

  1. Cut a vanilla bean lengthways and then cut each portion in half again. Put these pieces into a saucepan and add a quart of milk.


  2. Slowly add a teaspoon of honey while you stir the mix over a low heat. Bring the mix to the boil for 15 minutes stirring frequently to stop the mix from burning.


  3. Then reduce the heat so your vanilla extract mixture is just simmering. Leave this to simmer for a further 20 minutes. Remember to stir frequently or your mix will burn to the bottom of the pan. You should find your milk has developed a thin filmy top layer.


  4. Leave your extract to cool and then pour into small sealable containers or bottles. Try to store it in smaller portions because each recipe will only use a small amount of extract.


  5. If you plan to make ice cream right now, then simply put a little into a container and put it in the fridge to cool until you need it. You can freeze the rest of your extract to be used for the next time you want to make ice cream. If you intend to make ice cream soon, simply take a container out of the freezer and leave it in the fridge to thaw.


Now we have one of the basic ingredients to use in any recipe for homemade ice cream, let's make home made ice cream!

Homemade Vanilla Ice Cream Recipe

Ingredients:

  • 3 eggs
  • 1/2 cup honey
  • 4 cups cream
  • 2 teaspoons vanilla extract

Method

  1. Separate the egg yolks and the egg whites into separate bowls.


  2. In your first bowl, beat the egg yolks gently and begin to stir in the honey. Continue beating these ingredients until they're well mixed.


  3. In your second bowl, beat the egg whites until they form stiff peaks. When they're white and firm, fold them gently into the mixture in your first bowl.


  4. Pour your egg and honey mixture into a saucepan and turn on a low to medium heat. Slowly add the cream, stirring the mixture constantly at this point.


  5. Heat the mixture for 15 minutes. It's okay to allow the mixture to bubble a little, but it shouldn't be boiling.


  6. Stir in 2 teaspoons of your home made vanilla extract and remove from the heat and allow to cool for a few minutes.


  7. Pour your ice cream into a plastic container or bowl and place it into the freezer. If your container doesn't have a sealable lid, then cover the bowl with cling wrap.


  8. If you're going to add different flavors to your base ice cream, then you should do it at this step.


  9. Remember to remove the ice cream from the freezer every hour for the first 3 hours and stir it around. After three hours, simply leave your creamy home made ice cream to freeze.


  10. Enjoy your wonderfully creamy home made vanilla ice cream!

Changing Flavors

Perhaps you'd like to add a little variety to your recipe for homemade ice cream? It's possible to mix and match your favorite flavors to suit your own tastes.

All it takes is a little experimentation and some taste testing to get it just how you like it. Here are some suggestions:

Homemade Chocolate Ice Cream

Using the homemade vanilla ice cream recipe as a base, simply add as much chocolate syrup as you like after you've made your ice cream but before you freeze it. Stir the mixture well and taste test to be sure you haven't added too much or too little.

When you have the right balance to suit you, simply put your homemade chocolate ice cream mixture into the freezer overnight.

Homemade Strawberry Ice Cream

Using the home made vanilla ice cream recipe as a base, simply puree a cup of strawberries with the tops removed. Pour the puree mix through your cooled ice cream after you've made it and stir through before putting it into the freezer.

Strawberries can sometimes be a little bitter, so if the mixture is not quite to your liking, add a little castor sugar to sweeten the mix.
