Irish Stew Recipe

Below is a wonderful and healthy Irish Stew recipe, its a perfect homemade lamb stew for a busy person as it only takes a few minutes to prepare!

Ingredients For Irish Stew

Irish Stew Ingreadients
  • 4 tablespoons plain flour
  • 3 lb (1.3 kg) middle neck of lamb (trimmed of visible fat)
  • 3 large onions (chopped)
  • 3 carrots (sliced)
  • 1 lb (450g) potatoes (quartered)
  • 1/2 teaspoon dried thyme
  • 1 1/2 pints (850ml) hot beef stock
  • Salt and pepper
  • 2 tablespoons chopped fresh parsley (to garnish)

Method

Making Irish Stew
  1. Preheat oven to 325 F (160 C/ gas mark 3).
  2. Pour the flour onto a plate and spread it out. Season it with some salt and pepper.
  3. Coat the lamb in the flour by rolling the pieces across the plate.
  4. Remove excess flour by shaking the lamb and then place into the base of a casserole dish.
  5. Take the onions, carrots and potatoes and layer them on top of the lamb.
  6. Shake over the thyme and add the stock. Cover and cook for about 2 1/2 hrs in a preheated oven.
  7. Garnish the stew with chopped fresh parsley and then serve.
