Irish Stew Recipe
Here is a wonderful and healthy Irish Stew Recipe.... This is a perfect homemade lamb stew for a busy person as it only takes a few minutes to prepare.
Ingredients For Irish Stew
- 4 tablespoons plain flour
- 3 lb (1.3 kg) middle neck of lamb (trimmed of visible fat)
- 3 large onions (chopped)
- 3 carrots (sliced)
- 1 lb (450g) potatoes (quartered)
- 1/2 teaspoon dried thyme
- 1 1/2 pints (850ml) hot beef stock
- Salt and pepper
- 2 tablespoons chopped fresh parsley (to garnish)
Method
- Preheat oven to 325 F (160 C/ gas mark 3).
- Pour the flour onto a plate and spread it out. Season it with some salt and pepper.
- Coat the lamb in the flour by rolling the pieces across the plate.
- Remove excess flour by shaking the lamb and then place into the base of a casserole dish.
- Take the onions, carrots and potatoes and layer them on top of the lamb.
- Shake over the thyme and add the stock. Cover and cook for about 2 1/2 hrs in a preheated oven. Garnish the stew with chopped fresh parsley and then serve.
