Homemade Strawberry Shortcake
Here is the recipe for my all time favorite homemade strawberry shortcake recipe. Trust me, it's really easy to make this dessert, and all of my friends and family just love it.
Ingredients
2 Cups (250g) Flour
3 tsp Baking powder
1/4 Cup (50g) Half stick butter cut into cubes and chilled (if using unsalted butter add ½ tsp of salt)
1/4 Cup (50g) Sugar super fine or caster
1 tsp vanilla essence
1/2 Cup (120/150 ml) milk
Topping
5 tbsp Sugar
2 Cups (500g) Mascarpone
3 tbsp Milk
1 lb (450g) Strawberries
1 Orange (zest and juice)
Method
Line a 20 cm cake tin with wax paper (parchment) and lightly butter, Preheat oven to 390f (200c).
In a large bowl sieve flour salt and baking powder and mix well, and rub in the butter to make fine bread crumbs.
Mix in sugar and vanilla then add the milk to make a soft dough. Knead on a floured surface until smooth.
Roll out and gentle press into cake tin and bake for about 15/20 mins or until brown. Turn out on to a cooling rack and leave to cool.
Topping
Slice strawberries and place in a bowl, sprinkle with 2tbsp of sugar then add the zest and the juice of the orange. Leave to chill for about 30 minutes.
Mix the Mascarpone milk and remaining sugar and beat until smooth and fluffy. Spread the mascarpone mixture over the base then gently pile on the strawberries pouring over any juices left in the bowl.
