Homemade Potato Soup Recipe
With Chicken and Bacon

A fantastic and warming homemade potato soup recipe that is sure to please the whole family. With added chicken and bacon this recipe is a firm favourite of mine, so Im sure you will like it.

 

 


 

Ingredients For Your Potato, Chicken and Bacon Soup

Homemade Potato Soup Recipe
  • 1 tablespoon butter
  • 1 onion (sliced)
  • 2 garlic cloves (chopped)
  • 9 oz (250g) smoked lean bacon (chopped)
  • 2 large leeks (sliced)
  • 2 tablespoons plain flour
  • 1 1/4 pints (1 litre) chicken stock
  • 1 lb 12 oz (800g) potatoes (chopped)
  • 7 oz (200g) skinless chicken breast (chopped)
  • 4 tablespoons double cream
  • Salt and pepper
  • Grilled bacon and sprigs of fresh plat-leaf parsley (to garnish)

Method

  1. In a large saucepan, melt the butter over a medium heat.


  2. Add the garlic and onion, cook for three minutes, stirring.


  3. Add the chopped bacon and leeks to the pan, cook whilst stirring for another three minutes.


  4. Mix flour with enough stock to create a paste in a bowl and then stir it into the saucepan. Cook for a further two minutes, stirring.


  5. Stir in the left over stock and then add the potatoes and chicken to the pan.


  6. Use salt and pepper to season and then bring to the boil. Reduce the heat and simmer for about 25 minutes (make sure the chicken is cooked through.


  7. Slowly stir in the cream and then leave to cook for another two minutes.


  8. Take the pan of the heat and pour the soup into bowls.


  9. Garnish the soup with grilled bacon and flat-leaf parsley and then serve.
