Homemade Potato Soup Recipe
With Chicken and Bacon
A fantastic and warming homemade potato soup recipe that is sure to please the whole family. With added chicken and bacon this recipe is a firm favourite of mine, so Im sure you will like it.
Ingredients For Your Potato, Chicken and Bacon Soup
- 1 tablespoon butter
- 1 onion (sliced)
- 2 garlic cloves (chopped)
- 9 oz (250g) smoked lean bacon (chopped)
- 2 large leeks (sliced)
- 2 tablespoons plain flour
- 1 1/4 pints (1 litre) chicken stock
- 1 lb 12 oz (800g) potatoes (chopped)
- 7 oz (200g) skinless chicken breast (chopped)
- 4 tablespoons double cream
- Salt and pepper
- Grilled bacon and sprigs of fresh plat-leaf parsley (to garnish)
Method
- In a large saucepan, melt the butter over a medium heat.
- Add the garlic and onion, cook for three minutes, stirring.
- Add the chopped bacon and leeks to the pan, cook whilst stirring for another three minutes.
- Mix flour with enough stock to create a paste in a bowl and then stir it into the saucepan. Cook for a further two minutes, stirring.
- Stir in the left over stock and then add the potatoes and chicken to the pan.
- Use salt and pepper to season and then bring to the boil. Reduce the heat and simmer for about 25 minutes (make sure the chicken is cooked through.
- Slowly stir in the cream and then leave to cook for another two minutes.
- Take the pan of the heat and pour the soup into bowls.
- Garnish the soup with grilled bacon and flat-leaf parsley and then serve.
