Italian Turkey Cutlets

I love homemade italian food! So can I ask everyone to post their favourite Italian Recipe below? I will start it off with this tasty Italian Turkey Cutlets Recipe.

Italian Turkey Cutlets


Serves 4

Ingredients
1 tablespoon olive oil
4 turkey escalopes or steaks
2 red peppers (deseeded and sliced)
1 red onion (sliced)
2 garlic cloves (finely chopped)
10 fl oz (300ml) passata
5 fl oz (150ml)medium white wine
1 tablespoon chopped fresh marjoram
14 oz (400g) canned cannellini beans (drained and rinsed
3 tablespoons fresh white breadcrumbs
Salt and pepper
Fresh basil sprigs (to garnish)


Method
Preheat the grill to medium. In a flameproof casserole or heavy based frying pan, heat the oil. Add the turkey and cook for 5 ? 10 mins over a medium heat, turning now and again. Remove the escalopes and place onto a plate.

Add the red pepper and red onion to the pan and cook for 5 mins over a low heat, stirring now and again. Add the garlic to the frying pan and cook for another 2 mins.

Place the escalopes back into the pan and then add the passata, wine and marjoram. Season with salt and pepper. Bring to the boil and then turn down the heat. Cover and cook gently for 25 ? 30 mins, stirring now and again (make sure the turkey is cooked through).

Add the cannellini beans, whilst stirring and simmer for another 5 mins. Shake over the breadcrumbs and place under the grill for 2-3 mins. Garnish with the fresh basil sprigs and then serve
