Homemade Chocolate Chip Cookie Recipe
Everyone loves homemade chocolate chip cookies and this recipe is so quick and easy that you can enjoy them whenever you want.
Ingredients
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter or margarine
- 1 3/4 cup flour
- 1/2 cup shortening
- 1 teaspoon baking soda
- 1 1/2 teaspoons vanilla essence
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup chopped pecan nuts
- 1 cup chocolate chips (milk chocolate tastes best, but experiment with dark chocolate chips or white chocolate chips.)
Method
- Before you begin preheat your oven to 375 F (190 C).
- Grab a large bowl and mix together the brown sugar and granulated sugar. Add the softened butter and shortening and stir vigorously until mixture is light.
- Add the egg and drizzle in the vanilla and continue to stir well.
- Add flour into the mixture and be sure you mix it in well. Then add baking soda and salt.
- When all ingredients are blended thoroughly into a nice cookie dough, stir through your chocolate chips and pecan nuts.
- You'll need an un-greased baking sheet. Use a teaspoon to spoon out a little dough. Drop a teaspoon full of dough onto the baking sheet, making sure each dollop is around 2 inches apart. This is important, as your cookies will spread out as they cook.
- When your tray is full, put into your pre-heated oven and bake for about 8 to 10 minutes. Your cookies are ready when they turn a light golden brown color. Be careful not to bake them too long or they'll go dry.
- Remove home made cookies from the oven and slide off the baking sheet onto a wire rack to cool.
Homemade Oatmeal Butterscotch Cookies
These oatmeal butterscotch cookies are wonderful when you bake them so they're chewy, but they're also great if you prefer them crispy too. The texture you end up with depends on cooking time.

- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup butter
- 3/4 cupgranulated sugar

- 1 teaspoon of vanilla extract
- 3 cups quick cooking oats
- 12 oz (340 grams) butterscotch flavored chips
Method
- Before you start, pre-heat your oven to 375 F (190 C).

- In a large mixing bowl, beat softened butter, granulated sugar, brown sugar, eggs and vanilla extract until mixture turns creamy.
- Slowly add in the flour mixture, beating continually. When flour mix is combined thoroughly, remove beaters and switch to mixing with a spoon. Stir through the uncooked quick cooking oats and the butterscotch chips.
- You'll need an un-greased baking sheet. Use a teaspoon to spoon out a little dough. Drop a teaspoon full of dough onto the baking sheet, making sure each dollop is around 2 inches apart. This is important, as your cookies will spread out as they cook.
- When your tray is full, put into your pre-heated oven and bake for 7-8 minutes if you want your cookies to be chewy or bake for 10-11 minutes for crunchy cookies.

Homemade Macadamia Nut Cookies
Some recipes for macadamia nut cookies can be a little dry if they're not done right, so this recipe has a little twist you might not expect.
It's that little twist that makes these cookies perfect with coffee and it's one of our favorite homemade cookie recipes.
Ingredients
- 1 cup brown sugar
- 1/2 cup butter or margarine
- 1/4 cup half-and-half
- 1/4 cup Irish cream liqueur
- 1/4 teaspoon rum extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 3 oz (100g) macadamia nuts chopped
Method
- Before you begin, pre-heat your oven to 350 F (175 C).
- In a big mixing bowl, beat together brown sugar and softened butter. When mixture is creamy, reduce beater speed down to low. Add your half-and-half, liqueur and rum extract.
- Continue to beat mixture until ingredients are well combined. Add flour, baking soda and salt and continue to beat. When all ingredients are well blended, stir in macadamia nuts with a wooden spoon.
- You'll need an un-greased baking sheet. Use a teaspoon to spoon out a little dough. Drop a teaspoon full of dough onto the baking sheet, making sure each dollop is around 2 inches apart. This is important, as your cookies will spread out as they cook.
- When your tray is full, put into your pre-heated oven and bake for 10-12 minutes. Your cookies are ready when they turn a light brown color. Be careful not to bake them too long or they'll turn dry.
