Homemade Cookie Lollipops
I thought you may like to have a go at my homemade cookie lollipops using my easy fool proof basic cookie recipe. You can of course use any cookie recipe you wish but this particular cookie dough can be made up and kept in the refrigerator for a week or frozen for a month.
Oh and the cookie sticks aren't actually lollipop sticks but coffee stirers (complements of the last coffee shop I visited).
Cookie dough
3 Cups plain flour
180g Butter
11/4 Cups brown sugar
11/2 tsp Baking powder
1 Egg
1 tsp vanilla essence
Beat butter and sugar together with a electric mixer then add the egg and vanilla and beat again.
Sift in flour and baking powder and mix well.
At this point if you want to add ½ a cup of chopped cherries or sultanas feel free.
Divide the dough in to two and roll each piece in to a sausage shape and wrap each roll in plastic wrap, then place in the refrigerator to go firm so its easier to handle.
To make the homemade cookie lollipops simply cut in to slices and mold. Cut or shape each slice just like you would with play dough, place on a greased baking sheet and then gently insert a stick inside (about 3/4 of the way in).
Bake at 350f (180c) for 10-15 minutes then transfer to a cooling rack to cool (Don't try to hold the cookies with the stick until they are cooled and hardened ).
Now for the kids favorite bit decorating! Icing, sprinkles and chocolate drops how many can your kids fit on?
