Homemade Coffee Nut Cookies

Here is my Homemade Coffee Nut Cookies Recipe. I came up with it by taking the traditional chocolate chip cookie recipe and adding different ingredients.

Since I like my chocolate chip cookies to be slightly crisp and buttery tasting, I like these cookies to be puffy, and they take more flour. You can use whatever flavor or type of coffee you want.

I always use less sugar in my recipes than normal, and find they taste just as good. No one actually needs a lot of sugar and I always try to use organic sugar.

I also make my cookies using gluten-free flour, so they work for either kind. You can use cocoa or carob powder, depending on what you like.


Here is the recipe

Mix together:

1 cup Smart Balance Margarine
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1/2 cup ground coffee
1/4 cup cocoa or carob powder
2 3/4 cups flour.

Roll into balls and place on a cookie sheet.

Then add macadamia nut halves, chocolate chips and raisins on top of your cookies.

Bake at 375 degrees F (190 degrees C) for 7-10 Min's. or until done.
