Homemade French Onion Soup Recipe
A wonderful homemade french onion soup recipe, Packed with goodness and very very tasty, we hope you love it as much as we do!
Ingredients For This Onion Soup
- 1 lb 8 oz (675 g) Onions
- 3 Tablespoons olive oil
- 4 Garlic cloves (3 chopped, 1 peeled but kept whole)
- 1 Teaspoon sugar
- 2 Teaspoons chopped fresh thyme
- 2 Tablespoons plain flour
- 4 Ffl oz (125ml) dry white wine
- 3 1/2 Pints (2 litres) vegetable stock
- 6 Slices of French bread
- 10 1/2 oz (300g) Gruyere cheese (grated)
- Fresh thyme sprigs (to garnish)
Method
- In a large (heavy - based) stainless steel pan, heat the olive oil.
- Slice the onions thinly and add them to the pan. Cook for ten mins, stirring frequently.
- Add the chopped garlic along with the sugar and thyme.
- Turn down the heat and cook for 30 mins, stirring frequently.
- Shake in the flour and cook for another couple of minutes, stirring.
- Pour in the wine. Stir in the stock gradually and bring the boil.
- Skim off any scum that rises to the top and then turn down the heat, leave to simmer for 45 mins.
- Whilst it is simmering, preheat the grill to medium and toast the bread on both sides.
- Take the garlic clove and rub the toast with it.
- Pour the soup into six flameproof bowls sat on a baking tray.
- Lay a piece of toast in each bowl on top of the soup and sprinkle the cheese over.
- Place the baking tray under the grill for a few minutes.
- Garnish with thyme and then serve.
