Ingredients For Your Chicken Soup Recipe

Homemade Cream Of Chicken Soup
  • 3 tablespoons butter
  • 4 shallots (chopped)
  • 1 leek (sliced)
  • 1 lb (450g) skinless chicken breast (chopped)
  • 1 pint (600ml) chicken stock
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon fresh thyme chopped, plus extra sprigs to garnish)
  • 6 fl oz (175ml) double cream
  • Salt and pepper

Method

  1. In a large saucepan, melt the butter over a medium heat. Add the shallots; cook for three mins, stirring.


  2. Add the leeks to the pan, cook whilst stirring for another five mins. Stir in the chicken, stock and herbs; season to taste with salt and pepper.


  3. Bring to the boil and then Reduce the heat and simmer for about 25 mins (make sure the chicken is cooked through).


  4. Take the pan off the heat and let it cool for about ten mins.


  5. Process the soup in either a blender or food processor until smooth. Rinse the pan and then return the soup to it. Warm for five mins over a low heat.


  6. Slowly stir in the cream and then leave to cook for another two mins.


  7. Take the pan of the heat and pour the soup into bowls. Garnish the soup with sprigs of thyme and then serve.
