Cheese and Bacon Soup

Here's my recipe for Cheese and Bacon soup. This one tastes even better than the Beef and Bean Soup! ...If that's possible ;-)

Ingredients - Serves 4

2 tablespoons butter
2 garlic cloves (chopped)
1 large onion (sliced)
9 oz (250 g) smoked lean back bacon (chopped)
2 large leeks (trimmed and sliced)
2 tablespoons plain flour
1 ¾ pints (1 litre) vegetable stock
1 lb (450g) potatoes (chopped)
3 ½ fl oz (100ml) double cream
10 ½ oz (300g) grated cheddar cheese (plus extra to garnish)
Salt and pepper


Method

In a large saucepan, melt the butter over a medium heat. Add the garlic and onion, cook for three mins, stirring. Mix in the bacon and leeks, cook for another three mins whilst stirring.

Mix the flour in a bowl with enough stock to make a smooth paste. Add it to the pan and cook for a further two mins still stirring. Stir in the rest of the stock and add the potatoes. Season with salt and pepper, bring to the boil and then turn down the heat. Simmer for 25 mins.

Pour in the cream gradually whilst stirring. Cook for five mins and then add the cheese a bit at a time, stir until melted.

Pour the soup into bowls and garnish with grated cheese, serve straight away.

Nice recipe!

I was a little apprehensive making this, because I'm very picky with cheese. Nevertheless, me and my friend made it because she loves cheese. I tried it, expecting to hate it, but loved it! It's such a good little recipe. I'll be making it again, especially since it's so easy to make.
