Here's my recipe for Beef and Bean soup. It tastes fantastic so I hope you all like it!
Ingredients - Serves 4
2 tablespoons vegetable oil
1 large onion (finely chopped)
2 garlic cloves (finely chopped)
1 green pepper (deseeded and sliced)
2 carrots (sliced)
14 oz (400g) canned black-eyed beans
8 oz (225g) fresh beef mince
1 teaspoon each ground cumin, chilli powder and paprika
¼ cabbage (sliced)
8 oz (225g) tomatoes (peeled and chopped)
1 pint (600ml) beef stock
Salt and pepper
Method
In a large saucepan, heat the oil over a medium heat. Add the garlic and onion, cook for three mins, stirring. Add the pepper and the carrots to the pan, cook for another five mins.
In the meantime, drain the beans and reserve the liquid. Take 2/3 of the beans and put them into a blender or food processor, along with the reserved liquid, keeping the rest of the beans aside. Process until smooth.
Put the beef into the saucepan. Cook, stirring all the time, until well browned. Add the spices to the pan and cook for a further 2 mins, stirring. Now add the cabbage, tomatoes, stock and pureed beans. Season with salt and pepper, bring to the boil and turn down the heat. Cover and simmer for 15mins.
Stir in the remaining beans and cover.
Simmer for another five mins. Then pour the soup into warmed bowls and serve.
